I only offer fandoms I already know well enough or have revisited recently enough that I don't really need to do it in terms of remembering what happens or the general dynamics and characterisation, so any canon review I do is just supplementary brushing up - either revisiting a specific scene or episode because it's directly related to my story idea, or maybe dipping in to refresh my sense of what the character voices sound like for some of the more minor characters. So it's usually something that happens more towards the middle of the process where I already have a good idea of what I'm intending to write and am just tightening up the specifics.
