With often wildly inconsistent rules/world building. Some people are really in to "my biological clock says we must fuck now, random stranger" and some are into "the smell of you means you are my true destined mate forever" but you can also probably find a fic to fill in any point between those two ends, which might themselves sometimes be the same fic.
Not so much sex pollen because in its most classic form the A/B/O designations shape interpersonal relationships and societal structures in their entirety, the heat/rut phase is just one part of that.
If you want to get down to the historical nitty-gritty, it's actually a merger of influences from, on the one hand, the Vulcan Pon Farr lore in Star Trek canon, and on the other hand werewolf lore, which I'd guess at the time was at least somewhat influenced by Wolfstar (Remus/Sirius) fic tropes in Harry Potter but of course werewolf fic has older and broader origins.
The first omegaverse fics in the sense that we think of it today came out of J2/Supernatural RPF.

I know it wasn't intentionally but that they picked letters that abbreviate to a racial slur is still deeply unfortunate.
I mean, the terms "alpha" "beta" and "omega" are what they are, and the abbreviation is used less now that people have become aware that it's a slur. I do think it's telling that no one ITT but the omegaverse hating coalie is actually using it, which tells me everything about them that I need to know.
I'm currently using This Podcast Will Kill You, Black Box Down, Scary Interesting, Well There's Your Problem (if you can handle the news segments), and Calamity! (if you can handle the not-great recording quality) as my bedtime reading. But there's others.

Hey, same! Only I'm hoping to write a treat, and am therefore faced with the dilemma of never having a works count of exactly 100 if I have two Yuletide fics revealed together.
It's a combo of soulbond, pon farr, d/S AU, werewolf kink, and mpreg, basically. And occasionally other stuff dropped in just for fun, there's often little bits I recognize from Sentinel AU too. Except at this point there's such a huge variety of stuff put under the tag that basically all you can guarantee is there'll be at least one character who is called an "omega" as an extra gender category.
