If you're this paranoid, just take a screendump of the letter, write your fic and never check back to the actual letter.

(i have dealt with a letter that wanted h/c and had a bunch of H things that were "dnw for requested pairings, but likes generally" and kept adding pairings to the letter well into the writing period, so while my example was simplified it's not hypothetical.)
