The main reason I want more female alphas is my kink is well-worldbuilt alternate biology and it's not inherently impossible with omegaverse! There's fish that have x/y/w sex chromosomes and three each different male and female phenotypes, there's birds that do the "alphas must pair with omegas" thing. But there's not really even anywhere to start if you don't have a norm for what's up with the females. Your average all m/m alpha/omega fic is basically biology equivalent to male/female, and that's just boring to worldbuild the biology any farther.
I believe you, but this is the exact opposite of why I do fandom. I would never be in a fandom if I didn't like the source material. I read fanfic when the canon was great but it wasn't enough, and I want more of it.
Everyone in my favorite fandom has posted a letter except one person. But their one sentence sign up is exactly what I want to write so I’m not that upset about it.
The fics that stand out most to your mind from Yuletides long gone, and not because they were written for your own request OR because of wank surrounding them. Go.
I tend to like the characters (or sometimes just the actors and the *idea* of the characters) but not what the story does with them or where it takes them.

Which also means if you do match on that blank signup, there's a 73% chance they're either a first-timer or second-timer. There's only four people who've been doing Yuletide repeatedly and did a blank signup this year. So you're probably better off assuming they're a newbie following the written rules like they thought they were supposed to, and being kind in what you gift them, than assuming they're a jerk and being a jerk.
It's probably also a good idea to not write a new person something like omegaverse or hanahaki that presumes a lot of fandom experience, or some kind of very extreme or unusual kink they may not have ever encountered before, at least not if you ever want them to do an exchange again. But it's also probably not a good idea to worry a whole lot about whether they have lots of fanon they're expecting you to share, or have secret hidden likes, or are lying in wait to judge you for writing something you should have known they wouldn't want. They're probably a newbie who wants a fic of some kind for a small fandom and hasn't really got strong preferences or enough experience to know if they want to DNW anything.
And just to be stalky, of the four non-newbies this year:
amyezekiel usually has short prompts (although a few times they've given prompts for some fandoms and blank on others, not great!)
Fmnds usually at least puts in DNWs, although they seem to be going lower-effort every year - last time they signed up they had copy-pasted DNWs and a placeholder letter (not great!)
Marien has done a blank signup every year since the app has let you search by user.
PlayerProphet has done reasonably extensive prompts every other year they signed up.
So if you want to complain about the people who sign up every year with a blank signup and should know better, as opposed to newbies or people having an off year ... I guess you're talking about Marien specifically? Is Marien the sole legitimate source of blank singup wank? Although looking at their AO3, they seem to be yuletide-only - they have 21 yuletide or NYR fics and five small-book-fandom fics posted in January or February and that's it - so I suspect they have no idea about all the unwritten expectations either. And they do leave nice comments on all their gifts, frankly I'd be happy to match.
JKR even believes, or believed, circa the publication of her essay, that gender identity can be a thing and that some people can be trans. She said she referred to, and thought of, the trans people she knew according to their claimed identity.
You're just mad that she also thinks that women should be able to organise on the basis of their sex, that women should be entitled to single-sex provision in spaces they are vulnerable, and that you can't cow her because she's earned so much money that she never needs to fear losing a job.
