I think canon couples are probably the one exception to the gen default rule people just don't bother mentioning. Because yeah, you should be able to write the canon pairings if you offer those characters.

The gen default is probably more because there's differing expectations when it comes to fandoms and for cases like the following: a small fandom has 50 fics, 40 of them a non-canonical slash pairing. This does not mean that the random person who offered the canon because they just watched it but don't actually participate in the fandom has to be willing to write slash. There's plenty of people from many different areas of fandom who participate in Yuletide, and shipping just isn't the default for everyone.
