It's not as front-and-center in his letters as it used to be - for Yuletide 2020, he DNWed "non-canon relationships", which wouldn't make most people bat an eye. (Still sort of hilarious, coming from him: non-canonical dewclaws, sure, but relationships, why, that's a bridge too far!)

But if you move backward to some of his older letters, he DNWs non-canonical relationships and then also includes commentary like "slash make[s] me twitch spasmodically", or "I'm also not terribly fond of slash, unless it's canon for the characters involved to swing that way. In my opinion, the best way to avoid these things is to remain true to the characters, which fortunately also has the effect of making for better stories." (Which, again, being lectured by Untherius about how slash isn't "true" to the characters, and sticking close to canon makes for better fic, is quite something.)

The Red Tree by Caitlin Kiernan is standalone horror about a lesbian; the MC, her ex-girlfriend and the housemate she has an affair with during the book are nominated.

The Dyke & the Dybbuk by Ellen Galford is a standalone (comedy) fantasy novel about a lesbian who a demon causes to fall in love with/crush very hard on a really religious girl in order to fulfill a contract to haunt her family. The MC and the woman she has a thing for are nominated.

Would it be wanky to sign up for drinkswap and DNW coffee and tea? I've never done swaps before and that one looks the most my thing.

But I love all kinds of hot drink mixes from Bovril to spiced Tang but do not love the flavors of coffee or tea. Which is part of why the idea of getting a packet of interesting new hot drink options always appeals! But I can also see why getting a DNW coffee and tea match would be bad for some people, if that's mostly what the swap is, and I also don't want to risk just getting, like, a packet of Swiss Miss because my match isn't aware of options other than coffee and tea.

DNWing the main opinions is always some level of problem (imagine what you would do if your recip had DNW gen and ship) but if you gave examples of drinks you do like (“I love chocolate, spiced drink mix for ciders, water flavorings and infusers, and soda mixes!”) then that negates any burden you may have otherwise placed on your gifter by taking the big two off the table. Tea and coffee will always be easier but as long as you give them some guidance its not a dealbreaker.
